Farmer's Breakfast

Farmers Breakfast (German: Bauernfrühstück) is a heavy potato based dish. Simple and tasty. Despite its name, the dish is preferably served for lunch or dinner.



INGREDIENTS

(1 serving)


300g Potatoes

Half an onion

2 Eggs

Pickles

Fresh rosemary

Sunflower oil

Butter

Pickled peperoni (optional)

Salt & Pepper



PREPERATION


Boil the potatoes with skin until they are almost cooked. Take them off the fire, drain the water and let them cool down a little before you cut them into thick slices.


Heat plenty sunflower oil in a deep pan and add the sliced potatoes. Fry the potatoes until they are golden brown. Turning the potatoes individually for the first time helps to get them nice and crispy. Patience is the key here.



Cut the onion into little disks. Also chop the rosemary and pickled peperoni. Peperoni are optional for the ones who prefer it spicy (like myself).


Once the potatoes are golden brown, add the mix to it. Salt and pepper the whole thing. Turn down the heat a little and fry for a couple of minutes more.


In a smaller pan, melt some butter and fry the eggs sunny side up. Top the potatoes with fried eggs and serve together with pickles on a flat plate. Boom!
